Protein Banana Bread
Ever wanted good tasting banana bread but also wanted some protein to hit your nutritional daily intake? Here is a banana bread recipe to do both!
Banana bread is always my go to if I feel like snacking or having a sweet treat. I love how the mouth-watering smell fills my house and cutting into the loaf the texture is fluffy, moist and dense.

- Cooking spray or low fat butter, to grease loaf pan
- 265g (1 ¾ cups) self-rising flour
- 40g (1/4 cup) Vanilla protein powder
- 1 teaspoon ground cinnamon
- 100g (2/3 cup) brown sugar
- 2 overripe medium bananas, mashed
- 2 eggs, lightly whisked
- 125ml (1/2cup) skim milk
- 50g butter, melted, cooled
- 2 teaspoons of pure vanilla extract
Preheat oven to 180degrees. Brush an 11x21cm loaf pan with cooking spray. Line with non-stick baking paper, allowing it to overhang.
Sift and combined flour, protein and cinnamon into a large blow. Stir in the brown sugar and make a well in the center.
Melt butter in a small bowl, add the eggs, and milk until well combined.
Add the runny mixture to the flour mix until combined.
Mash bananas up in a medium bowl, until you have a pudding like mixture. Add mashed bananas to the rest of the mixture.
Spoon banana bread mixture into the loaf pan and smooth the surface.
Bake in preheated oven for 45-50 minutes or until a skewer inserted into the center comes out clean, and banana bread is lightly golden. Safety remove from oven and set aside on the pan for 10-15minutes. Turn onto a wire rack to cool completely.
Cut into slices to serve.
Serving size: 1 ¾ inch slice
