Buckwheat Pancakes with Protein!

1 x Cup Buckwheat
2 x Cups Milk
2 x Eggs
2 x Teaspoons Vanilla extract
2 x Cups Self-Raising Flour
½ x Cup Protein powder
¼ x Teaspoon bicarb soda
1/3 x cup white sugar
25g x Butter, melted
Method
Step 1
Cook buckwheat first with 2 ¾ cups of water in a medium pot. Bring water to a simmer then cover with a tight fitted lid. Simmer on low for 18-20mins. You should hear a hissing sound and all the water would have soaked up and evaporated. Leaving soft cooked buckwheat.
Put aside in a medium bowl to cool.
Step 2
Combine flour, protein powder, bicarb soda, and sugar into a large bowl.
In a medium bowl whisk milk, butter, eggs, and vanilla. Make a well in the flour mixture then add the milk mixture mix until combined.
Once these mixtures have combined you can add your buckwheat. Mix until combined.
Step 3
On low to medium heat take a large non-stick frying pan, brush pan with butter or cooking spray. Use ¼ of pancake mixture per a pancake, cook 2 to 3 pancakes for 3-4 minutes until bubbles in the mixture appear, flip pancake onto other side and cook for an additional 3 minutes until cooked through. Safely transfer to a plate. Loosely cover with aluminium foil to keep warm. Repeat with the remaining mixture, brushing pan with butter or cooking spray between each pancake batch served.
